Ravioli are molded in the form of crescents, triangles, squares, circles. And their sizes can be from miniature to very large. It is very important that the ravioli dough is rolled out very thinly and should be translucent.
Ravioli is boiled, fried, deep-fried and served as an independent dish with different sauces, or put in broths and pureed soups. Our advice will help you figure out how to sculpt square ravioli.
Step 1
For work, we need ravioli dough, filling, kitchen board, rolling pin, culinary wheel for cutting dough.
Step 2
On a lightly dusted board, roll out the dough very thinly (the thickness of the dough is not more than 1 mm).

Fold the dough in half and mark the fold.
Step 4
Put the filling on one half of the dough with peas, making a distance of 2.5-3 centimeters between them and from the edge of the dough. Spread the gaps between the filling with whipped protein or water.
Step 5
Cover the filling with the second half of the dough. Press the dough in places where there is no filling.
Step 6
Using a knife or a special wheel, cut the ravioli into the desired shape. Check if the edges are well connected.
Step 7
Lay them out on a lightly floured surface and let dry for 15 minutes. Our Ravioli are ready to cook.
