Cabbage is a very healthy and very affordable vegetable. Many people grow cabbage in their gardens and dachas. The question often arises of how cabbage can be preserved so that it can be used for cooking longer. Drying is one way to preserve vegetables.

Dried cabbage, along with other dried vegetables, is also very beneficial to take with you on hikes. Dried vegetables take up little space, are light and compact. It is very easy to cook soup or borscht from such vegetables during the campaign.

For drying, choose dense, white, mature heads of cabbage. Cut the cabbage into small strips. Practice has shown that the best result in terms of color and preservation of the finished product is obtained if the cabbage is blanched for 2 minutes before drying and quickly cooled in cold water.

How to dry cabbage step by step instructions with photos

Step 1

 

For work, we need a knife, a vegetable dryer, a kitchen board, cabbage.

Step 2

 

The upper sluggish, polluted, green leaves are removed from the cabbage. Cut the cabbage into small cubes measuring 2.5x3 cm.

Step 3

 

If desired, before drying, put the cabbage in portions in a colander and dip in a pot of boiling water for 2 minutes. Cool cabbage quickly in cold water. Shake cabbage to get rid of moisture.

Step 4

 

Arrange the cabbage on the vegetable drying racks.

Step 5

 

Dry for 4-5 hours at 60-65°C until ready.
