Required products :

for marinating meat:
  • 2 tablespoons ginger paste
  • 1/2 teaspoon turmeric
  • left

  • 450 grams of chicken, cut into pieces
for the spice mix:
  • 1 tablespoon sesame seeds, cumin seeds and coriander
  • 6 dried hot peppers
  • 5 grains of black pepper
  • 1 cm cinnamon stick
  • 3 cloves
  • 2 tablespoons grated fresh coconut
  • 1 teaspoon water
for the stew:
  • 2 tablespoons oil
  • 3 green hot peppers
  • 3 bay leaves
  • 1 onion
  • rice for serving

Method of preparation :

Start by marinating the meat - mix all the spices and season the chicken with them. Set it aside to marinate.

Roast sesame seeds, coriander seeds, and cumin in a dry hot pan add the dried peppers, black pepper, cinnamon, and cloves. Wait 15 seconds for the spices to release their aroma and remove from the heat to cool.

Once cooled, grind them with 45 milliliters of water and coconut in a blender until smooth and smooth.

Put the oil in a saucepan to heat. Add the peeled and chopped green hot peppers and bay leaves. After 15 seconds, add the onion and fry until done - about 5 minutes.

Add the spice paste and simmer for 10 minutes until the oil separates on the mixture. Add the chicken and stir. Pour the remaining water, season with salt and pepper, and cover. Reduce heat and simmer for 15 minutes until meat is done.

Serve the dish hot with boiled white rice.
