Step 1

For work, we need pork ears, carrots, onions, bay leaves, black peppercorns, water, allspice, salt, saucepan, small knife, tin brush.

Step 2

Wash and clean pig ears. Then soak the ears for 2 hours in cold water.

Step 3

Again carefully clean and scrape the ears with a tin brush and a small knife.

Step 4

Place the ears in a pot of cold water. Bring water to a boil. Boil on low heat for 15 minutes. Drain the water and rinse the ears and pan. Pour them with fresh cold water (add enough water so that it is slightly above the level of the ears). Bring to a boil and cook under a lid over low heat for 1.5 hours, regularly skimming off the foam.

Step 5

Then put in a saucepan to the ears, peeled and cut into large pieces of carrots, peeled onions, peppercorns, bay leaf, salt.

Step 6

Cook over low heat for another 30 minutes.

Step 7

Remove the ears from the decoction, let the liquid drain and cool completely. And only then proceed to cutting the ears. Pig ears are ready to go.
