Millet is a very ancient and useful grain crop with a bright yellow color. Among all grain crops, millet is the least allergenic. It can be used even by people suffering from liver diseases, digestive disorders, diabetes mellitus, atherosclerosis.
But millet is not subject to long-term storage, as it contains a lot of fat, which quickly oxidizes. As a result, the cereal becomes rancid. Therefore, before cooking millet, it must be washed several times in hot (hot) water to wash off all the oxidized fat on the surface, as well as dirt.
