Jam is a traditional preparation among the Eastern Slavs: Ukrainians, Russians, Belarusians. Preparing jam from berries, fruits, and sometimes from vegetables. They are boiled together with sugar for the purpose of canning.

The main difference between jam and jam, confiture, jam and marmalade is that jam has a heterogeneous consistency and consists of two parts: syrup and whole (or pieces) berries and fruits.
Jam can be prepared according to the classic recipe, that is, boil it in 3-4 doses, each time completely cooling the syrup with berries or fruits, and insisting for some time. Jam can be prepared according to the “five-minute jam” recipe, when the jam can be boiled once for 5 minutes. And also the housewives prepare live or raw jam, when the berries are rubbed with sugar and are not amenable to heat treatment.
When preparing jam, consider some of the nuances:
- jam is best cooked in a wide bowl so that the lower layers of berries or fruits do not soften under the weight of the upper ones;
- jam is best cooked in thick-walled dishes;
- it is best to cook jam in enameled dishes without chips, as well as in stainless steel dishes;
- in the classic version, 1 kg of sugar is taken for 1 kg of raw materials;
- cook the jam on a quiet fire;
- when cooking jam, remove the foam;
- the jam is ready when a drop of syrup does not blur on a saucer;
- for storage for the winter, boiling jam is poured into sterilized jars and closed with sterilized lids;
Today we will cook raspberry jam according to three recipes.
Recipes with fresh raspberry ingredient
Step 1
For work, we need raspberries - 500 grams, sugar - 500 grams, water - 1/4 cup, saucepan.
Step 2
Pick fresh raspberries. If you are not sure about the purity of the berries, then rinse and dry the raspberries.
Step 3
Combine sugar and water in a saucepan.
Step 4
Bring to a boil and boil the syrup, stirring, until the sugar is completely dissolved (2-3 minutes).
Step 5
Remove the syrup from the heat and dip the berries into it. Shake the pan several times so that all the berries are covered with syrup. Leave in this state for 5 hours.
Step 6
After 5 hours, over low heat, bring the contents of the pan to a boil and boil for 2 minutes. Leave for 5 hours. Repeat this procedure 2 more times. During the last cooking, pack hot jam in sterilized jars and close with sterilized lids for long-term storage.

Classic jam is ready.

Sort the raspberries, put in a bowl.

Pour the berries with sugar and shake the bowl a little so that the sugar is evenly distributed among the berries.

Leave the berries for at least 5 hours. During this time, the berries will release juice.

Place the berries with the resulting syrup in a saucepan and bring to a boil over low heat. Remove foam. Cook the jam over low heat for 5 minutes.
Step 6
Five-minute raspberry is ready. For long-term storage, pack hot jam in sterilized jars and close with sterilized lids.

Step 2
Sort raspberries, remove tails and leaves.
Step 3
Place the raspberries in a blender and puree until smooth.
Step 4
In a bowl, combine raspberry puree and sugar.
Step 5
Stir until the sugar is completely dissolved in the raspberry puree.
Step 6
Live raw jam is ready. This jam is stored in jars, closed with plastic lids, in the refrigerator.
