The disodium ribonucleotide is white (or colorless) crystals or powder. The additive has no characteristic odor, has a pronounced specific taste. It dissolves well in water, in ethanol the degree of solubility is medium, and in ether - it does not dissolve in practice. In nature it is found in some species of fungi, in the tissues of fish and some animals (mainly marine life). For industrial purposes it is obtained by fermentation of glucose.
Although sodium glutamate E 621 is mainly used in the food industry to enhance the taste and aroma of products, sodium ribonucleotide also has its place. It has the property to enhance the taste and aroma that are lost during the heat treatment of the product. E 635 gives food a soft and harmonious taste. The substance is usually added to meat products, various sausages, soups, broths and pasta for instant cooking, some confectionery.
The supplement is not safe for human health. It is often the cause of intestinal and stomach disorders. It can lead to deterioration of health in people suffering from chronic diseases such as: bronchial asthma, rheumatism, gout. Due to possible side effects, E 635 is banned for use in the food industry in some countries . There is no maximum daily amount that is safe for humans.
