Tragacanth is a stabilizer that preserves the consistency and viscosity of food products. Used in the production of flavored beverages, it is able to increase the density of oily particles of essential oils, which are used as flavorings. Essential oils do not settle to the bottom, but rise to the surface, which can lead to the formation of oily spots.

Use

Thickeners are used to stabilize beverages such as chocolate milk because cocoa particles can precipitate.

E 413 is used in the food industry in the production of:

  • dairy, meat and fish foods;
  • milk drinks containing fruit as a stabilizer;
  • ice cream and cream to obtain a creamy consistency;
  • confectionery and jam;
  • for ice crystallization;
  • for moisture retention and for the preparation of saline solutions in meat processing;
  • as a gelling agent.

Impact on humans

The permissible daily dose of tragacanth is not more than 2 g / kg body weight. The food supplement E 413 is approved for use in many countries around the world. In the food industry it is used in combination with other similar stabilizers. People with diseases of the gastrointestinal tract should be careful when consuming products with the presence of the substance.

Tragacanth is not an allergen, in direct contact with the skin it does not cause irritation.
