The ratio of acid and alkali in the body is called pH (potential of hydrogen). With the correct proportions of acids and alkalis, the pH of the blood should be slightly alkaline, and a deviation to the "acidic" side causes unpleasant symptoms and diseases.
The division of food into acidic and alkaline was first carried out by the famous German scientist R. Berg more than 100 years ago. He concluded that an alkaline internal environment is the most optimal state of the body.
And the proportion of alkaline and acidic food in the diet should be 3:1, that is, three times more alkaline products.
The acid content in the blood is influenced by various factors - from a passive lifestyle to the products included in the diet and the ability of the organs to remove carbon dioxide from the body. With excessive "acidification" of the body, its cells are deprived of oxygen and other important necessary substances; the body tries to compensate for the acidic pH level with the help of alkaline minerals. And when the diet is not sufficiently saturated with minerals for this compensation, the body depletes the reserves from body tissues in order to calcify the body (calcium, sodium, potassium, iron). An acid imbalance reduces the energy potential of cells and prevents the repair of damaged cells.
Achieving pH balance is not an easy task, but healthy habits and a conscious lifestyle come in handy to easily maintain this balance.

Food products affect the acid-alkaline balance of the body's internal environment, namely lymph, blood, and interstitial fluid.

Oddly enough, an "acidic" product does not necessarily have a sour taste: for example, lemon, ginger and celery give an alkaline reaction. And milk, coffee and wheat bread, on the contrary, have a distinctly acidic character. Refined and starchy food, sugar, coffee and caffeinated drinks, alcohol should be reduced to a minimum, and dairy products should not be too enthusiastic.
In general, the division is as follows: products of animal origin, cereals, especially refined, dried legumes, cheese, are classified as "acidic" food. Fruits, vegetables, greens, sour milk, yogurt, milk, some nuts, and water are alkaline.
But the final substances that are formed in the digestion process and enter the lymph and blood, into the intracellular fluid, affect the acid-alkaline balance : in animal and vegetable proteins, these are amino acids, in plant products - fruit organic acids, sugar and those synthesized from organic acids salt Here, the main principle is a variety of products, both acidic and alkaline (with their preference). Extremes are by no means promoted - to eat only alkaline food (remember the 1:3 ratio).
Adhering to such a diet is quite simple, especially for those who are inclined towards vegetarianism. It is rich in fiber and antioxidant substances, and is also completely devoid of "empty calories". In the menu of any establishment, you can find vegetable and fruit dishes, mineral water, so the acid-alkaline balance can be controlled in almost any life circumstances. This diet is aimed at improving the body, not at losing weight. But practice shows that excess weight "escapes" by itself, because when the body gets healthy, it gets rid of everything extra and acquires its natural, slender appearance.
