Necessary products

For the dough:

flour - about 800 grams

25 grams of live yeast

1 teaspoon salt

1 teaspoon sugar

480 milliliters of warm water

sesame for sprinkling - to taste

 

For the stuffing:

softened butter - 100 grams

200 grams of cheese

 

For spreading:

fresh milk - 2 tbsp

yolk - 1 piece

 

Method of preparation:

Crush the yeast in a glass, put a pinch of sugar and 1 teaspoon of flour. Pour 50 milliliters of warm water, mix thoroughly and leave in a warm place for 15 minutes to swell the yeast and increase its volume 2 times.

Pour the flour into a suitable container, add salt, sugar and water. When the yeast is ready, add it. Knead the dough and leave it to rise (it should double in volume). When this happens, divide into 5 equal parts, leave for 15-20 minutes to rise again.

 

Roll each part into a circle with a diameter of about 20 - 22 cm or just stretch with your hands, grease with softened butter. Do the same with the rest of the dough, except the last one, and arrange them on top of each other. Sprinkle the surface of the last layer of dough with flour and roll out in the form of a rectangle 5 - 7 cm thick. Grease again with butter and sprinkle with grated cheese. Roll the dough into a roll, then spiral into the baking tray. Leave in a warm place to rise, spread with beaten egg yolk, sprinkle with sesame seeds and bake in a preheated oven to 170 - 180 degrees for about 30 minutes. When removed, spray with cold water and cover with a towel.
