Required products :

  • 500 grams of puff pastry
  • 1 small onion
  • 100 grams of butter
  • 3 tablespoons oil
  • 700 grams of sauerkraut
  • 10 grams of fennel seeds or fennel / fennel
  • sugar, salt
  • 700 grams of smoked salmon fillet

For the sauce:

  • 230 milliliters of cooking cream with a fat content of 33%

Method of preparation :

Thaw the dough in the refrigerator (this will take 12-14 hours), do not take it out of the package until it is time to form the strudel.

Cut onions into small cubes, fry them in a mixture of 2 tablespoons oil and 1 tablespoon butter. When it becomes transparent, add the chopped sauerkraut, dill seeds, a little salt, sugar and stew for 10 minutes.

Melt 3 tablespoons of butter in a pan, heat well and then transfer the cabbage to it. Stir.

Melt the remaining oil in the emptied pan.

Cut the fish fillet crosswise in half. On a towel the dough, spread it with butter, spread the cabbage, leaving 3 cm of free space at all ends. Then place the salmon and fold the free ends of the base over the filling. Brush the dough with butter and roll it up. Put it in a tray on a sheet of parchment paper, smear the surface with oil and make incisions on it.

Bake the strudel in the oven for 25 minutes at 180-190 degrees, and 5 minutes before it is completely ready, once again carefully grease with oil.

Beat the cream with a mixer together with horseradish and salt to taste. When the strudel has cooled a bit (about 10 minutes), serve it with this sauce.
