Required products :

  • 1 kg of pork
  • 2 stalks of leeks
  • 3 peppers
  • 1 small eggplant (optional)
  • 3 tablespoons oil
  • 3/4 tea glass of white wine
  • 3 crushed garlic cloves
  • Bay leaf
  • pepper

Method of preparation :

Cut the meat into small pieces and pour them into a bowl. Put salt, pepper, pour the wine, 1 tablespoon oil, garlic, a little chopped leek, bay leaf. Mix everything well, close the container with plastic wrap and refrigerate for 2-3 hours to marinate the meat.

Then drain the marinade (using a colander), do not throw it away.

Heat 2 tablespoons oil in a pan. Fry leeks and meat in it until you get a yellow crust.

Transfer to a suitable deep pan, add one pepper, cut into random pieces.

Clean the other two peppers from the seeds and tails and puree with a blender. Pour over the meat, pour the marinade (the liquid should completely cover the meat, if it is not enough, add water or broth). Close the pan with a lid and place the dish in the oven, preheated to 180 degrees for 1 hour. 30 minutes after the start of cooking, check the amount of liquid and, if necessary, top up.
