Required products :

2 bunches sorrel
2 tablespoons sugar
1.5 teaspoon salt
250 ml thick milk
20 grams gelatin
4 radishes

Method of preparation :

Clean and wash the sorrel, blanch for a minute in salted water, then drain the liquid, pouring the leaves into a colander.

Using a blender, grind the sorrel, you should get a puree.

Pour gelatin with cold boiled water. Pour 50 milliliters of water into a suitable container, place on the stove and add the sugar and salt. Leave the mixture on medium heat until the sugar has melted.

Drain the gelatin from the water and add it to the hot sweet liquid. Stir until the first is completely dissolved. Add to the sorrel and mix well. Whip the cream to a fluffy foam.

Put the bowl with the resulting green puree in a water bath and gradually add the cream in portions, stirring thoroughly after each serving. Remove the pan from the heat.

Wash and dry the radishes, cut them into very thin circles and arrange on the bottom of suitable cups or bowls, overlapping the circles on top of each other.

Distribute the mousse in the prepared dishes, cover with plastic wrap and refrigerate for a few hours.
