Required products :

  • 1 onion
  • 1 head of garlic
  • 4 tablespoons butter
  • half a kilo of snails
  • a handful of roasted almonds
  • 1-2 mint leaves
  • 2 hot peppers
  • a pinch of black pepper
  • 200 ml broth

Method of preparation :

Clean, wash, boil and strain the snails. Melt the butter in a pan, heat and fry the finely chopped onions, tomatoes and garlic. Grind and add the almonds, season with chopped hot peppers and mint. Pour the broth, add the snails, sprinkle with black pepper and simmer on low heat for 40 minutes. Serve warm, garnished with fresh spices of your choice.
