Required products :

  • 4 sheets of frozen puff pastry
  • 1 bunch parsley
  • 5 sage leaves
  • fresh ginger root about 3 cm long
  • 1 teaspoon anise
  • 1 teaspoon grated lemon peel
  • 1 teaspoon white pepper
  • 1 teaspoon salt

 

  • flour for sprinkling on the countertop
  • 4 pieces of salmon about 220 grams each
  • juice of half a lemon

 

  • 1 egg yolk
  • 2 tablespoons cooking cream

 

Method of preparation :

Thaw the dough. Preheat oven to 220 degrees. Finely chop the parsley and sage. Peel a squash, grate it and crush the anise.

Mix parsley, sage, ginger, anise, salt, pepper, lemon peel.

Roll out the dough on a counter sprinkled with flour. The layer should be thin (not thicker than the thickness of the blade of a knife). Put a piece of fish sprinkled with lemon juice on each leaf. Spread the spice mixture over the salmon and wrap with the batter. Immerse in cold water and arrange in a pan.

Mix the yolk and cream, spread on the surface of the dough.

Place the pan in the preheated oven on the middle level. Bake for about 20 minutes, until the dough acquires a golden brown hue.

Serve with spinach or vegetable salad.

If this combination of salmon and puff pastry is too heavy for your taste, use sea bass, for example.
