How To Cook Roast Cod Fillet With Rice And Vegetables - Recipe

Required products :

  • 400 grams of cod fillet
  • 250 grams of steamed rice
  • 200 grams of frozen vegetable mix
  • 4 eggs
  • 200 grams of yellow cheese
  • olive oil, a mixture of different types of pepper and salt - to taste
  • 1 lemon
  • a mixture of Italian spices with oregano

 

Method of preparation :

Cut the cod fillet into small pieces, season to taste, pour the juice squeezed from the lemon and store in the fridge for half an hour.

 

Meanwhile, boil the rice (in salted water) and eggs. Pour a little olive oil over the grains so that they do not stick and do not dry out.

Remove the fish from the refrigerator and fry for about 5 minutes. Then add to it the vegetables that you have previously thawed in a separate bowl.

 

Let the products simmer together for no more than 3 minutes, because the fillet will become dry if you cook for a long time.

Grate the yellow cheese coarsely, cut the eggs. When the rice has cooled a bit, add the chopped eggs and half of the coarsely grated yellow cheese.

 

Stir and transfer the mixture to a pre-greased pan.

Spread the cod pieces with the vegetables on top.

 

Sprinkle with the remaining yellow cheese and bake the dish for 15 minutes in the oven at medium temperature.

 

Before serving, sprinkle with lemon juice and garnish with a slice of citrus. If desired, you can add a decoration of fresh green spices.
