Required products :

150 grams of chopped sorrel

1.5 liters of warm vegetable broth
5 tablespoons olive oil
1 onion
1 stalk celery
380 grams of rice (Arborio)
80 grams of butter
50 grams of parmesan or cheese
salt and spices to taste

Preparation :
Heat olive oil in a suitable pan, fry the finely chopped onion and celery for about 5-6 minutes until soft.
Add the rice and let it cook until the grains are transparent, stirring. Pour 2 scoops of broth and stir again, the rice should absorb the liquid. Then add the remaining broth, it should also be absorbed by the rice.
20 minutes later, when this happens, remove the pan from the heat and add the sorrel, butter and grated Parmesan / yellow cheese to the other products.
Stir vigorously with a wooden spoon until creamy. Season to taste and you can serve.
