Required products :

  • 750 milliliters of hot fish or vegetable broth
  • 2 tablespoons sunflower oil
  • 1/2 fennel (or 1 small bulb) cut into thin crescents
  • 2 cloves crushed garlic
  • 225 grams of arborio rice
  • 300 milliliters of dry white wine
  • 150 grams of frozen green peas
  • the juice of 1/2 lemon
  • 300 grams of salmon fillet - thinly sliced
  • 2 tablespoons sour cream
  • 3 stalks of tarragon, finely chopped
  • 30 grams of parmesan
  • salt and pepper

Method of preparation :

Pour the broth into the pan and keep it warm on the stove at low temperature.

Heat the oil to medium heat, pour the fennel and fry for 4 minutes until golden. Add garlic and rice, fry for 1 minute, stirring constantly.

Pour the wine over the broth and increase the temperature to boil the liquid. Using a ladle, take the broth and pour it over the rice, stirring constantly. Wait until the liquid is almost completely absorbed by the beans and add the next scoop of broth. Continue to add the broth in the same way, taking 250 milliliters of it. Boil the risotto for 15-20 minutes, then add the peas and lemon juice, put 1 ladle of broth and stir for a few minutes. Add salmon, cream, tarragon and parmesan. Stir well and leave on the stove until the salmon is ready.

Season with salt and pepper and sprinkle with a little Parmesan.
