Required products :

  • 400 grams of rhubarb, cleaned
  • 190 grams of sugar
  • 1 lemon - juice
  • 4 tablespoons gin

Method of preparation :

Cut rhubarb into 3 cm pieces, put in a saucepan, add sugar and 100 milliliters of water. Heat slightly to dissolve the crystals, but the water should not be heated.

When the sugar has melted, increase the temperature and let the mixture simmer for 15-20 minutes, stirring often. During this time, the rhubarb should have "dissolved" in the mixture and almost melted. Cool, add gin and blend to make a puree. Refrigerate for 1 hour.

Then stir the ice cream and put it back in the freezer for 30 minutes, stir again and continue every 30 minutes until the dessert hardens enough to stir. The process should take a total of about 3 hours.

Then freeze overnight and serve the sorbet the next day.
