Necessary products:
5 eggs
25 grams of granulated sugar for the yolks and 60 grams for the whites
100 grams of semolina
100 grams of wheat flour
100 grams of butter
100 grams of powdered sugar
For syrup
400 grams of granulated sugar
400 grams of water
40 grams of cognac
100 grams of lemon peel (or orange)
5 grams of cinnamon
Method of preparation:
Put semolina in hot oil and fry over low heat until golden. Separate the egg whites from the yolks. Beat the yolks with 25 grams of sugar and 25-40 grams of water until smooth. Beat the egg whites separately with the specified 60 grams of sugar. Carefully combine the two mixtures. Add semolina and wheat flour to them. Mix well, pour into a pan and cover with foil. Put in a preheated 200 degree oven for 15-20 minutes. Do not open the oven during baking.
Make a syrup from the water, sugar, lemon zest and cinnamon. Add a little cognac if desired. Cut the baked cake and pour the syrup over it. Sprinkle with powdered sugar and cinnamon. You can decorate with coconut shavings or chocolate bars.
