Required products :

  • 2 tablespoons olive oil
  • 1 clove of garlic, chopped
  • 1 cup finely chopped onion
  • 1 1/2 teaspoons grated zucchini
  • 1/2 cup pumpkin seeds
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons boiled chickpeas
  • 1 cup boiled quinoa
  • 2/3 tea cup of water
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh dill
  • 1 tablespoon fresh oregano
  • 1 teaspoon paprika

Method of preparation :

Add salt and drain the zucchini as much as you can.

Fry the onion and garlic until soft in olive oil and add the grated zucchini. Fry the vegetables until done, then season with salt and pepper.

Finely grind the pumpkin seeds with salt and pepper using a food processor.

Add quinoa, chickpeas, Dijon mustard, dill, red pepper and oregano to the ground nuts. Pulse several times to combine the products, then increase the speed of the robot and grind to a uniform consistency. If you think the mixture is very dry, you can add a little water.

Knead the resulting mixture with the zucchini by hand.

Form small meatballs and fry for 5 minutes on each side in 1 tablespoon of olive oil until done.

Optionally, you can bake them in an oven preheated to 185 degrees for 25 minutes.

You can garnish the burgers with healthy bread, avocado, milk sauce and others.
