Required products :

  • 2 - 3 quinces
  • 1/2 lemon - the juice
  • 1 1/2 teaspoons sugar
  • 1 pinch of salt

Method of preparation :

Peel a squash, grate it and squeeze the juice.

Cut into large cubes and place in a saucepan. Cover with water and add the lemon juice. Cook until the fruit is completely soft.

Strain and cool for 5 minutes. Grind the fruit with a food processor or blender.

Add sugar and salt to the quince puree.

Put in a saucepan or pan with a thick bottom and place on the stove. Cook over medium heat, taking care that the jam does not boil. Stir constantly to prevent burning until the jam begins to stay together and form a ball. The fruit during this time will change color to bright orange-red.

Pour the quince paste into a greased pan, spread and leave to cool.

Cut when hardened and refrigerate for up to 2-3 weeks.
