Put the flour in a shallow dish and lightly roll the meat in it, beat it with excess flour.
Heat 1 tablespoon olive oil and seal 2-3 pieces of meat for about 5 minutes until golden brown. Transfer to a plate. Do the same with the remaining fat and meat.
Put onion, bacon and mushrooms in the pan, fry them for 8 minutes. Add the broth, mustard and thyme. Stir, and after the liquid boils, add the meat. Cover and cook for 1 1/2 - 2 hours on low heat, until the veal is ready.
Remove the meat from the pan and chop it with a fork, then put it back and let the stuffing cool.
Prepare a round pan and grease. Cut the two puff pastry sheets into a circle corresponding to the bottom of the pan.
Put one puff pastry in the pan and spread the filling on top, leaving a 3 cm board at the end.
In the center of the second sheet of puff pastry cut a circle with a diameter of 4.5 centimeters. Using a sharp knife, make incisions in the puff pastry sheets, but be careful not to cut the dough completely. Place on the stuffing and press the edges together.
Brush with egg and bake for 30-40 minutes at 180 degrees.
