Required products :

  • 280 grams pistachios (cleaned)
  • 1 3/4 tea cup powdered sugar
  • 1/4 teaspoon salt
  • 1 protein
  • 350 grams of chocolate
  • green food coloring (optional)

Method of preparation :

Grind the pistachios finely (if you can't find raw nuts, use roasted ones).

Add sugar and salt to the ground nuts (if raw and unsalted), grind again to combine.

Beat the protein and add it carefully in portions, stirring again each time with the robot to absorb the mixture. When a slightly moist combination is obtained, which, shaking hands, forms a ball, stop adding protein.

If you use roasted nuts, at this stage add a little green food coloring to give a better color (raw pistachios naturally give a rich green color).

Form balls of dough and arrange in a tray. Refrigerate for 10 minutes.

When the sweets have cooled, melt the chocolate in the microwave or in a water bath.

Dip the candies in the chocolate and arrange back in the pan. Sprinkle with some of the ground nuts and refrigerate for 10 minutes until the chocolate is firm before serving.

Store them in a box in the refrigerator.
