How To Cook Pistachio Meatballs - Recipe

Required products :

  • 2 teaspoons fennel seeds
  • 220 grams of minced pork
  • 220 grams of minced chicken
  • 2 garlic cloves, finely chopped
  • 1 teaspoon black pepper
  • a pinch of cayenne pepper (optional)
  • 1/2 cup chopped pistachios
  • 1/2 cup finely chopped parsley

Method of preparation :

Grind the fennel seeds in a mortar or pestle.

Put both types of meat in a bowl, sprinkle with minced fennel, add garlic, black and hot pepper (if using) and knead the minced meat.

Add the pistachios and parsley and combine again.

Form meatballs about 1/4 cup each.

Arrange them in a tray lined with paper and cover with foil.

Refrigerate for 1 hour to 1 day.

When you are ready to cook them, cover the pan with aluminum foil and put several layers of kitchen paper on a plate. Preheat the oven to about 100-120 degrees.

Fry the meatballs in a non-stick pan over medium heat for about 5-9 minutes on each side until done. Transfer them to a paper plate to drain and then to the foil tray. Put in the oven while you prepare the remaining meatballs to keep them warm. Do not overdo their storage in the oven, if they stay there for more than 30 minutes, you risk drying out.
