Knead a countertop and roll out the dough into a large rectangle measuring about 48 by 32 centimeters. Cut it in half lengthwise, then each side into 8 pieces. So you get 16 rectangles.
Coat one narrow end of each rectangle with a small egg, place a piece of sausage at the other end, season with salt and pepper and sprinkle with a few thyme leaves. Roll by gluing with the end, which is smeared with egg. Shape all the rolls in the same way.
Put them in the freezer for 20 minutes. Once the rolls have hardened, arrange them in a tray lined with paper and make a decoration on top with a sharp knife, if desired.
Spread them with the remaining whipped egg whites and bake them at 200 degrees in a preheated oven. When the dough turns golden and looks crispy, remove the rolls from the oven and cool before serving.
