How To Cook Lamb Casserole With Couscous, Onions And Pine Nuts - Recipe

Required products :

  • 500 grams of leg of lamb (with fat)
  • 125 grams of couscous
  • 5 medium onions
  • 50 grams of pine nuts
  • pomegranate sauce with spices narsharab to taste
  • olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • freshly ground black pepper and salt

 

Method of preparation :

First, cut the meat into medium-sized pieces, two onions - in bulk and grind the two products with a meat grinder. Season with salt, pepper and put half of the cinnamon.

 

Add the couscous, pour about 150 milliliters of very cold water and stir to obtain a juicy homogeneous mass. Spread it with your hands in a small greased pan, flatten and grease with oil.

Cut into pieces and bake for half an hour in the oven at 180 degrees.

 

Meanwhile, cut the remaining onions into thin semicircles, crush the pine nuts. Fry the onion until golden brown for about 10 minutes, then add the nuts, two minutes later season with salt and pepper, cinnamon, allspice, pour pomegranate sauce to taste.

 

Fry for another minute and serve the lamb casserole with the fragrant onion spice.
