If you are a connoisseur of varied cuisine and want to try everything, this is your recipe. For most people, the consumption of exotic animal products is unacceptable, but in many countries meat, such as kangaroo, is regularly present at the table. We offer you an interesting recipe, and you can always replace the kangaroo meat with another and still enjoy the delicious dish.

Method of preparation :
Start with the preparation of lemon oil. Put the butter in the bowl of the mixer and beat until a creamy texture is obtained. Add the lemon juice, finely chopped parsley and salt. Stir well until all ingredients are mixed. Wrap in cling film and refrigerate for 2 hours.
Wash the carrots well and leave them whole. Peel a squash, grate it and slice it. Put the root vegetables in a pan, add the garlic cloves (from the dressing products) and olive oil. Season and stir so that all the ingredients can absorb the fat. Bake for 30 minutes in a preheated oven at 200 degrees.
Take the roasted garlic cloves and cut them into thin slices. Put them in a jar and add 60 ml of olive oil, vinegar, salt and pepper. Shake the bowl to combine the ingredients.
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Season the kangaroo fillet with salt and pepper. Seal it in the pan for 5 minutes on each side, if you prefer alangle, or continue cooking until it gets the look you want.
Once you have roasted the meat to your liking, let it rest for 10 minutes.
It's time to assemble the dish. For root vegetables, pour the lentils and season with the dressing from the jar. Put on a plate.
Cut the meat into thin slices and arrange it on top of the vegetables. Sprinkle with walnuts and parsley leaves.
Put 1 tablespoon of lemon oil on the meat.
