Necessary products:

 

for ice cream

 

  • 225 grams of mascarpone
  • 350 milliliters of fresh milk
  • 335 grams of crystal sugar
  • 6 egg yolks
  • 1 teaspoon vanilla extract
  • pinch of salt

 

for dessert

 

  • 28 cookies
  • 175 milliliters of water
  • 3/4 tea cup crystal sugar
  • 1/4 teaspoon instant coffee
  • 175 milliliters of rum
  • cocoa for sprinkling

 

Method of preparation:

 

Mix the milk with some of the sugar and salt in a saucepan. Heat the liquid until it boils, cool it and in another bowl beat the yolks with the remaining sugar. Combine the two mixtures and return to the hob.

Stir until you get a smooth cream and cool. Add the vanilla, mascarpone and mix until smooth. Store in a chamber, while dissolving the coffee in the water, along with the sugar and rum.

Dip the cookies one by one into the mixture and arrange in a pan. Spread some of the cooled cream on them, continue the arrangement in the same way, ending with a row of cookies. Sprinkle with cocoa. Cover the cake with cling film and freeze for three hours. Cut the dessert and serve.
