Required products :

  • 400 grams of chopped strawberries
  • 50 grams of water
  • 75 grams of sugar (for strawberries)
  • 1 teaspoon lemon juice
  • 500 milliliters of whole cream
  • 1 can of 400 grams of sweetened condensed milk
  • 1 tablespoon vanilla essence
  • 7 egg whites
  • 320 grams of crystal sugar
  • 1 1/2 teaspoons white wine vinegar
  • 1 1/2 teaspoons corn flour

Method of preparation :

 

Put the strawberries, water and sugar in a saucepan and cook until the strawberries begin to break down and the liquid thickens like syrup. This will take some time, but do not neglect the step so that there is not too much water in the ice cream afterwards. When the strawberry sauce is ready, add lemon juice and vanilla, and set aside to cool.

Meanwhile, preheat the oven to 110 degrees. Whip the cream with a mixer until hard peaks form and add the condensed milk. Transfer to a square tray with 20 cm sides (covered with paper) and flatten. Using a spoon, make a few piles on top of the strawberry mixture and stir with a stick in a spiral motion. Freeze for 2 hours, preferably overnight.

Prepare the kissing cake - with a clean dry mixer beat the egg whites in a dry bowl, until soft peaks and start adding the sugar spoon by spoon until it is completely absorbed and you get a shiny thick mixture. Add the vinegar (you can replace it with a little lemon) and the cornflour, stir last.

Divide the mixture between two square trays with 20 cm sides - covered with baking paper - and bake for 2 hours. Allow the kissed countertops to cool overnight.

Place one tray on top of the ice cream - with the uneven side up - turn the ice cream over the tray and remove the paper. Place the second tray on top, being careful not to break the kisses.

Put in the freezer, and when serving, cut into 9 pieces.
