Recipe for homemade lard

Required products :

  • 1 1/2 kilograms of raw bacon, maybe colorful

Method of preparation :

  • Cut the bacon into cubes about 1.5 cm in size. Don't worry if it's colorful and has a little meat on it.
  • Transfer the pieces to a large saucepan and heat over medium heat. Do not increase the heat, as there is a high probability that the fat will burn.
  • Stir with a wooden spoon every 30 seconds.
  • After about 10 minutes you will notice that the bacon begins to melt. Keep stirring every 30-60 seconds.

  • After about 40 minutes you will notice that more than half of the fat is melted.

  • Remove the pan from the heat and carefully strain the liquid into a large bowl through a fine sieve covered with clean cheesecloth.
  • Return the pan to the heat and reheat on low heat for about 50 minutes until the remaining fat is melted and the greaves are golden and crispy. Strain.

  • Carefully transfer the melted butter to clean and dry glass jars using a funnel.
  • Close tightly and allow to cool completely to room temperature.
  • Store in the refrigerator.

As for the greaves, you could cut them into small pieces and sprinkle them on the salad or just season them with salt and pepper and enjoy them. In moderation, of course.
