Mussels are already an affordable delicacy, we can find and consume them all year round, even far from the sea. There are some conditions to consider when buying mussels - as they are now available everywhere, it is good to know exactly how to choose and clean the mussels.
1. Choose the right mussels - what does that mean? In the store, take only those mussels that have a closed shell, the open ones are dead. As soon as you get home, open the bag they are in so they can breathe. Also discard any mussels that are broken, torn, or damaged in any way. It is important to store mussels in a cool place.
2. Just before cooking, soak them in clean water for 20 minutes. While they breathe, they throw away the sand. In 20 minutes there will be less salt and sand in their shells.
3. Most mussels have a "beard". These are a lot of fibers that come out of the shell of the mussel. To remove it, grab the chin with a towel and pull in the direction of "closing" the shell. This method will not tear the clam, otherwise you will kill it. Discard the threads.
4. Remove the mussels from the water, but do not strain them through a colander, as this will return the sand deposited on the bottom to them. Put them back in water in another clean bowl.
5. Rub the mussels with a stiff brush to remove any remnants of sand, shells, etc. Rinse the mussels under lukewarm tap water and set aside. Dry with a towel before cooking.
