Required products :

2 kg chicken wings
2 bay leaves
2 bunches dill
2 bunches parsley
1 onion
1 stalk leek
2 carrot
1 teaspoon ground black pepper
4 liters cold water
salt to taste

Method of preparation :

Peel and wash all the vegetables, cut them into large pieces.

 

Put the wings in a large saucepan, add the remaining products, fill with water and place on the stove. When it boils, remove the foam and add salt. Reduce heat and simmer for 3 hours.

 

Then strain, you will get about 2 liters of broth.

 

Return the broth to the hob and bring to the boil once more. Remove as much of the fat that will separate on the surface and let the liquid cook over low heat for about 2 hours until it thickens and acquires a caramel color. The temperature must be kept to a minimum during the last 30 minutes.

 

Pour the prepared thick broth into a deep enough rectangular container. Allow the liquid to cool to room temperature and refrigerate for 6 hours (or overnight).

 

When removed, cut into squares and wrap in plastic wrap.

 

Arrange them in a plastic box and freeze.
