Required products :

  • 3 large eggs at room temperature
  • 2 teaspoons fresh milk at room temperature
  • 1 3/4 tea cups flour
  • 1/2 teaspoon salt
  • 5 tablespoons unsalted butter, melted
  • oil to lubricate the pan

Method of preparation :

  • Sift the flour and salt into a large bowl.
  • Beat the eggs in a medium bowl and add the milk.
  • Transfer the egg mixture to the flour bowl and mix well until smooth.
  • Add the butter, stir again and refrigerate the pancake mixture for at least 2 hours. It should be the density of boza, so add more milk or flour if necessary.
  • Heat a large non-stick skillet over medium heat and grease it with oil.
  • Pour 1/3 tea cup of the dough into the pan and tilt it slightly to distribute evenly.
  • Bake for about a minute until the top of the pancake is dry and golden brown spots form on the bottom.
  • Turn it over with a spatula and bake for another 45 seconds until golden brown.
  • Transfer the pancake to a plate and cover.
  • Repeat with the remaining dough, greasing the pan with butter every 2 or 3 pancakes.
  • Serve the pancakes warm with jam, honey, cheese or anything else of your choice.
