How To Cook Gingerbread Waffle Sorbet - Recipe

Learn how to cook "Sorbet from the match with ginger waffles". Delicious recipe.

Inspired by the aromas of traditional Japanese afternoon tea, this beautiful sorbet from the match is served between two crunchy ginger waffles. Served this way, the dessert is an even more pleasant addition to tea.

Required products :

for sorbet:

  • 220 grams of powdered sugar
  • 750 milliliters of fresh milk
  • 80 milliliters of glucose syrup
  • 1 tablespoon matcha (green tea powder)

for ginger waffles:

  • 50 grams of butter
  • 2 tablespoons brown sugar
  • 1 and 1/2 tablespoons honey
  • 50 grams of flour
  • 2 teaspoons ginger root, peeled and grated

Method of preparation :

sorbet:

Pour the milk, sugar, glucose syrup and matcha into a large saucepan, put on low heat and stir until the sugar dissolves. Increase the temperature and bring to a boil, then remove the pan from the heat. Transfer the mixture to a glass bowl and refrigerate.

Then pour into an ice cream machine and beat according to the manufacturer's instructions (about 30 minutes). Transfer the mixture to the freezer and freeze overnight or until firm.

ginger waffles:

Preheat oven to 180 degrees. Cover the bottom of 2 baking trays with parchment paper.

Mix the butter, sugar and honey in a small saucepan and heat over medium heat. Stir until the butter is melted. Sift the flour and mix it with the ginger and butter mixture. Put 1 teaspoon of the waffle mixture on the bottom of the pan and with the help of the back of a spoon make circles. Bake for 4-5 minutes or until golden, then remove the waffles and cool.

Serve the sorbet from the match between two ginger waffles.

* It is best to prepare the waffles on the day of serving, while the sorbet can be made a week earlier and stored in the freezer.
