Necessary products for 4 servings:

 

  • 3 eggs
  • 1/2 cup sour cream
  • 8 tablespoons flour
  • 2 tablespoons chopped parsley
  • sol

 

for the stuffing

 

  • 4 green onion stalks
  • olive oil
  • one red pepper
  • 5 pitted olives
  • a handful of corn
  • a handful of peas
  • 1/2 cup chopped mushrooms
  • salt and pepper

 

for sprinkling

 

  • 50 grams of grated cheese

 

Method of preparation:

 

Preheat the oven to 180 degrees. Fry the fresh onion in olive oil and add the remaining vegetables. Stew for 2 minutes and cool. Season with salt and pepper to taste.

Beat the eggs, add salt, flour, sour cream and parsley. Stir until the products are mixed and combine with the vegetable mixture.

Pour into a pan pre-greased with olive oil, sprinkle with cheese and bake for 30 minutes until golden. Cool, cut the frittata and serve, garnished with fresh salad.
