Put the peaches in a blender, add the lemon juice, sugar syrup and vanilla extract. Mash until a homogeneous mixture is obtained.
In another bowl, pour the cream and beat with a mixer. Mix the milk cream with the fruit puree, stir. Dissolve the gelatin in the water, heat for 2 minutes and add it to the mixture.
