Necessary products:

 

for the dough

 

  • 125 grams of flour
  • 2 tablespoons chickpea flour
  • a pinch of turmeric
  • pinch of baking powder
  • 250 milliliters of water

 

for syrup

 

  • 150 grams of sugar
  • 125 milliliters of water
  • a pinch of saffron
  • 1 tablespoon lemon juice
  • frying oil

 

Method of preparation:

 

Prepare the dough in the evening. To do this, mix the flour with the chickpeas, add the baking powder, turmeric and water. Stir until the mixture is homogenized and cover with cling film. Allow the dough to stand at room temperature to ferment and bubbles to appear on the surface.

In the morning, remove the foil and add a little more flour - a tablespoon and stir. Pour the dough into a dressing bottle and heat the fat. To make the syrup, pour the water into a saucepan, add the sugar and saffron.

Season with lemon juice and cook until thickened. Spray the dough with rotating movements so that round spirals are obtained. Fry until golden and when ready, dip the jelly in the hot syrup.

Leave for 2-3 minutes, remove with a slotted spoon and place on kitchen paper. Finish the rest in the same way and arrange on a plate. Serve and enjoy.
