Required products :

800 grams of mashed canned tomatoes

1 teaspoon of broth of your choice or water

1 cube of soluble broth

75 grams of finely chopped red onion

5 cloves garlic

1 tablespoon olive oil

1 teaspoon sugar

2 tablespoons thinly sliced ​​basil leaves

60 grams of grated mozzarella

2 pieces of guada or other hard cheese

1 tablespoon grated Parmesan cheese

salt and ground black pepper to taste

 

2 loaves to buy

olive oil for spreading

basil for decoration

 

Method of preparation :

Cut the surface of the loaves, carve the inside to get bowls from the crusts. Brush them with olive oil and place in the oven for 3 minutes. Allow to cool.

Heat olive oil in a medium saucepan, fry onions and garlic in it until golden brown (about 2-3 minutes). Add the tomatoes, liquid and dry broth, sugar, pepper and let everything boil for 3 minutes. Add salt to taste. Then add the basil, mozzarella and stir. A minute later, remove the pan from the heat.

Distribute the soup in the prepared bread bowls, in each of them put a piece of guada and half a teaspoon of grated Parmesan.

Briefly place the bowl with the soup in the oven to melt the cheeses.

 Garnish with basil and serve immediately.
