You can always make this colorful pea cream soup. Use frozen peas and vegetables if you don't have fresh ones.

Necessary products:

  • 1 tablespoon butter

  • 1 tablespoon extra virgin olive oil

  • 1 medium onion, finely chopped

  • 1 stalk of celery, chopped

  • 2 cloves garlic, chopped

  • 1 teaspoon fresh thyme or parsley, chopped

  • 6 tea cups peas, fresh or frozen

  • 1/2 teaspoon water

  • 4 tea cups chicken broth (or vegetable broth) 

  • salt and freshly ground black pepper to taste

Method of preparation:

Heat the butter and olive oil in a saucepan over medium heat until the butter is melted. Fry the onion and celery in the fat until soft, stirring often. Then pour the garlic and thyme (or parsley) and stir for about 10 seconds. 

Add the broccoli, water and broth and increase the heat to a simmer. Cook until the vegetables are soft, then puree the soup in a blender until smooth. Season with salt and pepper.

Be careful when pureing hot soup. You can divide it into batches when blending so that you don't get burned.

Serve with toasted slices, croutons or pieces of cheese.
